Estero Gold is modeled after a young Italian Asiago, with an open texture, small holes, and straw-like color. It has a mellow, buttery flavor and creamy texture that complements fresh fruit and green salads. As the cheese ages, the flavors deepen, becoming complex and nutty. Serve more aged versions over pasta and polenta. The Bianchi/Grossi family boasts 5 generations that have worked the farm, and Valley Ford Cheese Co. is their way of bringing generations of Swiss-Italian cheesemaking history to our Golden State. Valley Ford’s cheeses are farmstead cheeses, meaning they are made from the milk of Valley Ford’s own herd. Home to over 400 Jersey cows, it is a “closed” herd that is dedicated to top quality health and nutrition programs.
