Native to Mexico and Central America, the avocado is a climacteric fruit - maturing on the tree but ripening off of it. 90% of U.S. avocado production occurs in California, mainly in the southern region of the state. Hass is the most common avocado cultivar, but dozens are grown, including Bacon, Fuerte and Pinkerton. Avocados have a creamy, sweet and mild flesh high in monounsaturated fat. They tend to brown quickly once exposed to air and are not well-suited to extended cooking, which causes bitterness. Avocados are enjoyed in both sweet and savory preparations, from milkshakes to sushi.
