Closely related to lemons, Limes are available in numerous cultivars. Limes generally have slightly less acidity than lemons and a more floral quality to their flavor. Limes are high in vitamin C and have a higher sugar content than lemons. Limes may be zested or juiced, dried or muddled, to access the brightly-flavored juice and intensely flavored oils in the rind. Limes are excellent for marinades, sauces, curds, cocktails, chutneys and sweets.
