The corn ear picked before pollination and maturation, Baby Corn is tender, crunchy, mild, and entirely edible. Because harvest is labor intensive, Baby Corn is rarely encountered fresh, but is far more delicious than its canned counterpart. It is excellent both raw and cooked, and is commonly included in stir fry dishes.
