Corn, or maize, is the most widely grown grain crop in the Americas and is a staple food in many parts of the world. Yellow Corn is a sweet corn variety and is harvested early to be considered a vegetable, as opposed to a grain. Yellow Corn is actually an offshoot of White Corn, a variety modified to include beta-carotene which gives Yellow Corn its color and adds nutritional value. It is often boiled or roasted, and finished with a touch of butter and a sprinkling of salt.
