Description

Light tan in color and thin skinned, Kennebec potatoes were introduced by the USDA in the 40's as a good frying potato, and were used primarily as chip potatoes for years. Kennebecs tend to have lower moisture, thus when fried they maintain their shape, do not get mushy and feature a distinctly earthy, potato-y flavor. Kennebecs are more perishable that other potato varieties, resulting in diminished popularity commercially, but are now coming into their own for their superior cooking performance.
