Cypress Grove founder Mary Keehn began raising goats in the 1970s to provide her family with healthful milk – in 1983, she took that milk to the next level and created Cypress Grove Chevre, a forerunner in the American artisanal cheese movement. Today Cypress Grove, in Humboldt County, works with small local farms to gather the best goat milk California has to offer, and turns that milk into products that represent the gold standard of fine cheese in the U.S.
Humboldt Fog is the grande dame, and Cypress Grove’s signature offering. A soft, mousse-like “cake” of surface-ripened goat cheese, with a line of vegetable ash transecting the middle and just under the rind. The ash is said to mimic the foggy grey line where the ocean meets the sky in Humboldt County, and it gives the cheese a lovely, subtle vegetal note that balances the rich, softly tangy goat cheese.
Midnight Moon is produced in Europe exclusively for Cypress Grove, and is a revelation. Aged a minimum of 6 months, it is dense and smooth with a long, brown-butter finish and decidedly nutty undertones. It is made with 100% goat’s milk.
Lamb Chopper is another selection made for Cypress Grove in Europe, this time with 100% sheep’s milk. Sweet and rich in the tradition of fine sheep’s milk cheeses, its texture is dense and slightly soft, and we love it toasted with great bread or folded into soft grits.
Truffle Tremor very much follows the tradition of Cypress Grove’s Humboldt Fog. Truffle Tremor starts with cultured goat’s milk, to which is added a small measure of black summer truffle (Tuber Aestivum). The wheels are then aged to ripe perfection, creating a dense, spreadable center and delicate bloomy rind. The flavor is truly complex, with plenty of goat-y notes balanced by subtle truffle undertones.
Bermuda Triangle is fresh goat cheese encased in two rinds: Ash and bloomy. The distinctive profile is excellent for dramatic plating, and the flavor is wonderfully mellow and earthy. The texture will soften and become creamier with age.
Fromage Blanc is fresh cheese at its finest, with a light texture and a nicely complex flavor. It is an excellent alternative to cream cheese and quark in recipes.
Retail packs of 6 4-ounce disks are also available, in a variety of flavors. Ms. Natural is fresh, cultured goat milk, salt and enzymes, for superb, clean, bright flavor and downy soft texture. PsycheDillic is made with fragrant and rare dill pollen and fresh dill. It is perfect with smoked salmon and omelets. Sgt. Pepper is made with a spicy blend of secret spices, garlic and chili peppers. Flavorful with just the right amount of heat, it is excellent tossed with pasta and spread over burgers. Herbs de Humboldt features Herbs de Provence, giving it that classic Mediterranean flavor and making it an excellent addition to pizza and salads. And Purple Haze combines lavender and fennel pollen. It is herbal, subtly floral and totally irresistible. Excellent alongside fresh fruit and honey.
