TCHO, the only chocolate factory located in the city of San Francisco, was founded by a Space Shuttle technologist and chocolate industry veteran with a singular goal in mind: To create “obsessively good dark chocolate.” TCHO personally sources their beans, all of which are then cut-tested, roast-tested and melanged in numerous more tests before lots are given the green light. TCHO has also distinguished itself in the field by striving to work directly with farmers and cooperatives to improve fermentation and bean drying methods. Essentially, TCHO empowers farmers with the tools to become premium cacao suppliers, ensuring better beans for the chocolate companies, and better prices for the farmers.

Also available by special order is TCHO’s Drinking Chocolate, dark chocolate crumbles designed to create an intensely rich, deep, fudgy flavor. The Drinking Chocolate may also be used to create iced drinks and chocolate sauces as well.
Our E. Guittard line is another excellent choice for the discerning chef. Available in disks, E. Guittard chocolates are easy to measure, melt quickly and smoothly, and are simple to store. Try Guittard 72% Cacao for a dark, rich and smooth chocolate with a luxurious mouthfeel, and assertive but not overpowering deep chocolate flavor. The 64% Cacao has a nice balance of dark chocolate flavor and mellow fruitiness. This is an excellent baking and eating chocolate that everyone loves. 61% Cacao Semisweet has super-rich choclate flavors with a long, pleasing finish. Very popular with pastry chefs, and excellent for cooking and eating. 55% Cacao has a pronounced fudginess and a well-balanced flavor profile, with plenty of smooth, milky flavor to round out the cocoa content. 38% Cacao is a classic milk chocolate, with plenty of bold, rich chocolate flavor and versatility. And 31% Cacao is Guittard’s French-style white chocolate, with plenty of cocoa butter and sweet, fresh cream flavor.
